What You’ll Do

As an Overnight Line Cook, you’ll help deliver consistent, high-quality food service during the night shift. You’ll work alongside your team to keep service running smoothly, maintain kitchen standards, and ensure every plate meets brand expectations.

• Prepare and cook menu items to order during overnight service, following standard recipes and plating guidelines.
• Maintain station readiness by prepping ingredients, organizing mise en place, and ensuring proper setup before service.
• Support smooth service by working efficiently on your assigned line station while coordinating timing with the team.
• Maintain food quality by monitoring portions, cooking temperatures, and presentation standards.
• Follow safety and sanitation procedures in accordance with local regulations and hotel standards.
• Keep equipment clean and in working order, including grills, fryers, ovens, and utensils.
• Adhere to inventory and storage practices, including proper labeling, rotation (FIFO), and temperature controls.
• Contribute to a positive kitchen culture by communicating clearly and supporting teamwork during overnight operations.
• Assist with closing tasks after service, including breakdown, deep cleaning as assigned, and station reset for the next shift.

What We’re Looking For

• Experience as a line cook or in a comparable kitchen role (preferred).
• Strong knowledge of food preparation, cooking methods, and basic culinary standards.
• Ability to work overnight hours with reliability and focus.
• Comfort working in a fast-paced environment while maintaining quality and attention to detail.
• Understanding of food safety practices (temperature control, sanitation, safe handling).
• Team-first mindset with clear communication and respect for shared workflows.
• Strong time management to handle prep, service, and cleaning responsibilities efficiently.
• Willingness to learn and follow IHG/InterContinental standards, recipes, and procedures.
